Quick, Easy, Savory Breakfast

eggs   I don’t know about you, but I’m just not an early riser.  I sleep until there isn’t another minute left.  And yet, I am a breakfast eater.  In fact, I’m quite grouchy without it.
So I have to choose….do I want to be an early riser or do I want to prepare?   I choose to prepare!!
This is an easy, go to breakfast item!

In a mixing bowl add
3 cracked eggs
Any cooked breakfast meat you have available-diced ham, bacon, diced sausage.
3/4 cup shredded cheese of your choice
1/3 cup diced onion
Dice of salt; extra dice of pepper

Mix to together.
Spray your muffin pan.
Add mixture 3/4 way full;;;;;back until eggs are firm.

Once brown, remove and let cool.
Drop in the lunch bag but heat up in the morning

yay breakfast!!
