Crock Pot Pork Loin

Kroger recently had an amazing sale on pork loin. I couldn’t pass it up.  For just a few bucks I was able to get a pork loin large enough to get at least a couple meals out of.
Now I don’t know about you but I’m tired of treating a pork loin like my regular mid-week pot roast.  Just throwing it in the crock pot with potatoes, carrots and a little salt and pepper.

Here’s what I came up with.  It’s a recipe worth sharing!

  •        I cut slices in the pork loin….not all the way through but close.   I stuffed the slices with a fresh, crisp apple slice

I then added:

  • chopped chives
  • raisins
  • a small pinch of black pepper
  • brown suger- I coated the top of the loin, with all the other ingredients.
  • You’ll need a little liquid to keep your meat from drying out so I used just a couple splashes of a Cab Sav.

Low on the crockpot and off to work!
